Adapted from Fresh Thai by Oi Cheepchaiissara cook book.

Ingredients:

  • 200 ml coconut milk
  • 200 ml chicken stock
  • 2 lemongrass stalks white part only cut into a tassel or bruised
  • 5cm galangal peeled and cut into several pieces
  • 15 black peppercorns, crushed
  • 400 gr skinless chicken breast, sliced
  • 1 1/2 tblsp fish sauce
  • 1 tblsp palm sugar
  • 150 gr mixed mushrooms (oysters, shitake, or button)
  • 200 gr cherry tomatoes
  • 2 1/2 tblsp lime juice
  • 5 kaffir lime leaves
  • 3 – 5 small red green chillies, bruised
  • coriander leaves for garnish

method:

  • heat coconut milk, stock, lemon grass, galangal and peppercorns in a saucepan bring to boil
  • add chicken, fish sauce and sugar and stirring constantly simmer for 5 minutes or until the chicken is cooked through
  • halve mushrooms, add tomatoes and simmer for 2-3minutes
  • add lime juice, kaffir lime leaves and chillies for the last few seconds
  • garnish with coriander

Tumis Jamur

kalo gue pulang ke Jakarta, gue selalu minta dimasakin nyokap makanan kesukaan gue. Yaitu Tumis Jamur ala mum. Berhubung sekarang lg hamil dan ngidam banget, akhirnya ngebul2 didapur berhasil juga niru niru dikit. Lumayan lah kalo kangen masakan mum yg penting rasanya mirip.

Bahan – bahan:

  • 500 gr jamur pasar (berhubung di Perth gak ada jd pake jamur button yg putih biasa di supermarket itu)
  • 3 buah cabe merah iris melintang
  • 1 buah cabe rawit (kl yg mau pedes) diiris melintang juga
  • 2 lembar daun salam
  • ebi 1/2 sendok makan
  • 1/2 tomat merah iris
  • 3 siung bawang putih dirajang alus
  • 3 siung bawang merah dirajang alus
  • air sedikitt aja karena toh nanti jamurnya berair sendiri
  • asam jawa 1 sendok teh

Cara membuat:

  • tumis bawang merah, putih, salam, ebi, tomat satu persatu sampai harum dan layu
  • masukin jamur, oseng sampai berair dan beri air sedikiittt aja
  • masukin gula jawa, dan asam jawa
  • garam seperlunya
